Scalloped Pineapple From "Virginia Cookbook II"

I didn't get to try this recipe, because it was gone before I had a chance. It isn't hard to find out how good a new recipe is when you get to it to late.

Scalloped Pineapple:

"Serve with ham, chicken, or an oriental meal!"

  • 1 (20-ounce)can pineapple chunks
  • 1/3 cup sugar
  • 3 tablespoons all-purpose flour
  • 1 cup grated Cheddar cheese
  • 1/2 cup crumbled buttery crackers
  • 1/4 cup butter, melted

Preheat oven to 350 degrees.

Drain pineapple, reserving 3 tablespoon juice. Combine pineapple juice with sugar and flour. Pour pineapple into a greased 1-quart casserole dish, and cover with juice mixture. Top with grated cheese. Combine cracker crumbs with melted butter. Sprinkle on top of casserole. Bake 20 minutes, or until bubbly. Yields 4 servings.
