Broccoli Casserole

Title of Cookbook is "Best of the Best from Virginia cookbook II"

Broccoli Casserole:

  • 2(10-ounce) packages frozen broccoli, partially thawed
  • 1(10 & 3/4-ounce) can cream of mushroom soup
  • 1/2 cup mayonnaise
  • 2 eggs, well beaten
  • 1 cup grated sharp cheese
  • 1 medium onion, chopped
  • salt and pepper to taste

Mix all ingredients together. Pour into a 9x13 inch casserole dish. Bake at 300 degrees for 25-30 minutes. Topping: 1/3 (8-ounce) package Pepperidge 1/3 cup margarine Farm Stuffing Mix Top baked casserole with stuffing mix. Cut margarine and sprinkle pieces over top. Return to oven and bake at 350 degrees for an additional 30-35 minutes
