Irish Soda Bread

  1. 1 Box (15 oz.) Seedless Raisins
  2. 1 Tsp. Salt
  3. 1 Tsp. Baking Soda
  4. 4 Tsp. Caraway
  5. 2 Cups Buttermilk
  6. 4 Cups Flour
  7. 4 Tsp. Baking Powder
  8. 1Tbsp. Veg. Shortening
  9. 2 Eggs, Beaten

Cover raisins with hot water and let stand 5 minutes. Sift together dry ingredients. Cut in shorting. Dry raisins with paper towel. Add caraway seeds and raisins. Mix beaten eggs and buttermilk lightly with a fork. Stir into flour mixture to make soft dough. Spread dough in large iron skillet or 12 1/2 x 9 1/2 x 2" pan greased with bacon dripping. Make small cross in dough with knife dipped in hot water. Bake at 350 degrees for 50 minutes or until done. Remove from pan and cool on rack.
